There was this rad little Thai cafe in Joondalup that makes a mean chilli chicken. But they never had the option of a tofu version, so it has been years since I have eaten it. As usual, the only option is to attempt a recreation of what was once a childhood sweetheart. A chilli childhood sweetheart.
This is a version of the recipe I found online. I used capsicum and sweet peas with tofu. Serve over rice. Top with various fresh herbs. And yes, I realise this is another cop-out where I haven’t invented the recipe BUT I do like to explore the internet and spread the love.
I haven’t felt like being majorly creative lately – my job contract, subject to funding, is looking to end 30 June, and I”m very nervous! Government jobs can be sketchy like that, but that’s the type of work I really want. But the fears of being unemployed again have me stressed, and therefore lacking much motivation to get creative in the kitchen.
But a girl’s gotta eat. And she’s also gotta try to blog more often.
