I love banana bread. But what I love more is a delicious piece of sweet that isn’t actually unhealthy. I’m so tired of biscuits and cakes and breads that are loaded with oils and sugars. Why can’t there be a banana bread that is nutritional and also tasty? Well there can be, thanks to this six ingredient bread that I found on Instagram.
I have now made this bread so many times, because it uses more bananas than usual, has very little ingredients and also works well with a variety of flours. My favourite flour to use is spelt.
The betterest thing about this bread is that it also works best as a CAKE. So that means more serves, right? What else do you want? The bread is dense, but also moist, and it customises so well. Try adding in walnuts, or being like me with a peanut butter topping. It also keeps reasonably well, so I like to make my bread and slice into portions for my work breakfast.
Can you guys believe that it’s already Autumn? Time goes so slowly, but I’m very much ready to leave the heat season and be able to function once more. Anything over 35* and I start to lose my reasoning capacity, so it’s possible I’m really a snow man. Not that I function particularly well in super cold environments anyway…I’m an Inbetweener.
