Firstly, I ate two pizzas today.
Secondly, I finally found a use for the silly pile of polenta that’s been hanging about in the cupboard. I don’t know how I even got it – I think someone offered it to me and I took it because I’m a scab. I’ve seen cooked polenta in a lot of US cookbooks, and they use it as some mashy porridge plop, but I really can’t stand food like that would only be served in a retirement home. Which is fine, but I’m not there yet, chaps. Instead of moosh, I wanted to make magical Polenta Chips, but then I was too lazy to chop them into chips. So here is a Polenta Steak. See what I did there?

I served my polenta with roasted veg – pumpkin, red onion, mushrooms, rosemary and some chopped sun-dried tomatoes (I’m obsessed with those matos).
