Tofu & Rice
Thank goodness for rice and tofu and all those cheap foods, like pasta and beans. Food that is yummy and reasonably healthy is all I can do right now. Probably about a month ago my government income was cut off, and so I’ve been running on empty for this month. My partner’s part-time income covers only the rent, so we need the govt stuff to help with food and bills. I’m unemployed, and yes I’m massively ashamed about it, but the pension stuff is what I’m working with at present. Until they cut me off for unknown reasons. So dinner like this is YAY!
This bowl is tofu (mushroom soy sauce, garlic, chilli and lemongrass) + purple Thai rice +
the chard I pulled up from the garden to make room for Spring crops + peanuts + spring onions.
The stirfry you see here was using one of those sachets of sauce by Changs. It was like 99c and there were (surprisingly for a pack sauce) only nice ingredients – like garlic, soy, sugar etc. I served this baby with some noodles + chard + capsicum + broccoli + kale + mushrooms, served with spring onion, Sriracha and peanuts!
Indian Colour Wheel
The third meal idea I have for you today is an Indian Bowl. It’s super simple, but I thought I would share it just coz. You never know what might inspire someone! This involved: tempeh + onion + curry paste cooked up and served with yoghurt. There’s quinoa cooked in veggie stock and mixed with spinach. The rest is just tomato and lettuce and naan bread. No the most amazing dish, but simple and tasty.
