Today’s colour wheel has smokey beans, some simple veg and an avocado dressing. It is served up with some tortilla chips and salsa, because I love salsa. You could use refried beans instead of the ones that I made, but I didn’t have any and I also liked my beans a lot. If you have access to cheese in your part of the world, then feel free to pile it on.
2 cups spinach, chopped
1/2 purple onion, diced
1 spring onion, diced
1/2 capsicum, diced
pea shoots, chopped
1 can white beans, drained
2 cloves garlic
1 tsp cumin grounds
1/2 tsp coriander grounds
2 TB nutritional yeast
2 TB soy sauce/tamari
1/4 tsp smoke essence
OR 1/2 tsp smoked paprika
1. In a frying pan, heat the garlic and beans together. The beans will start to become mushy.
2. Add in the spices, with a little water. Reduce the heat.
3. Stir through the remaining ingredients, taking care not to burn anything. Mash the beans as you stir, to make a chunky ‘refried beans’ style of texture.
4. Season, the serve ASAP.
1 avocado, flesh only
1 bunch coriander
1/2 lime, juiced
1. In a small blender, combine together to make the dressing.
It can be easier to add 1-2 TB water to help it along.
