This was another quick meal idea that ended up looking so pretty that I thought it deserved a post all to itself. Meals like this make me so happy, because I emptied my fridge of any stray ingredients that were soon to go off, and I was able to able to eat something healthy and enjoyable.
I feel that healthy food should always be delicious, because you never know whose “first vegan recipe” will be one I have posted, and if it’s disgusting then they wouldn’t likely want to continue. I think that’s where my partner and I differ. He will happily eat something gross for the health benefits – especially juices and smoothies. He’ll be all excited as he presents me with a juice and watches expectantly while I taste it. Often, it will be horrible. He knows that, and I’m not sure he even cares. One time he made me a juice that was beetroot + kale + radish. Horrible.
But this dish is great because it’s light, fresh and yummy. It won’t put you off the detox game, and it won’t taste like radish juice.
1 cup spelt berries, boiled & drained
3 garlic cloves, smashed
2 cups mushrooms, sliced
2 TB tamari
1 TB hemp oil
1 cup spinach, chopped
1 cup parsley, chopped
1. In a frying pan, cook the garlic and onions. I add water to hurry it along.
2. Once they are cooked, add them to your plate.
3. Serve by mixing the tamari and hemp through the berries.
Add the spinach and parsley, stir through.
Add the mushrooms and mix it all together.
