Sometimes I look at blogs or instagrams, and every photograph is so beautiful and colourful. I often find myself wondering whether those bloggers ever have a single meal that isn’t “perfect” – visually or tasty-wise. These thoughts led me to the decision to share some boring and every day foods that I make when I’m just not in the mood for cooking. I haven’t bothered with the obvious foods, like toast and soup, because anyone can make those. But if you’re strapped for time, or generally not feeling that cook’s vibe, then have a go at some of these babies. They always taste good, but there’s no “it factor” about them, which is why they aren’t often posted.
Here are some of the regular and every day foods that might be served up on a quick-meal-day:
Miso Soup with Stirfry Veg
In a saucepan, I heat up some mushrooms and garlic. Once soft, I pour onto a plate and set aside. I then fill the pot with water, and add miso paste. Heat up the water and add any veggies or noodles you want. I usually place the veggies on my plate and pour the soup over the top. Use the miso to heat your noodles, though. Serve the soup, veg and noodles with the garlic mushrooms. Yummy, quick and easy.
Whenever there are some flavoured tofu on sale, I will have a peak at the ingredients and upon confirming the vegan-ness, keep some for the proverbial rainy day. Flavoured tofu is a great hurried meal because the flavour has had days to permeate the morsel, and you don’t have to mess around with sauces.
To make this, I cooked the tofu in a pan. I boiled some basmati rice, and after draining it, I squeezed a lemon/lime’s worth of juice over it. Add some chopped spinach, sprouts and frozen peas, and there we have a simple and quick meal.
