To carry on with today’s theme: I am again using turmeric. The colour is a joyful yellow, although it starts off as orange. This salad is a medley of what was available in my fridge. Feel free to add whatever salads you like. I have used tomato, cucumber. coriander, corn and spinach.
To make the rice, bring to boil a pot of water. Add in 1 tsp dried/fresh turmeric and enough rice for 2 serves (about 1/2 cup each).
Once cooked, drain well. I also cooked red rice for a colour mix.
In a small pan, fry up 1 onion, chopped + 2 tsp curry powder + 1 tsp cumin powder. Once the onion has cooked, add in the rice and stir to coat. Season with a few tablespoons of soy sauce. Mix through your salad.
