As she finished her last bite, I told her: “the missing ingredient is TOFU.“
This recipe is from connoisseurusveg.com and I can assure you that there is 0% tofu taste. I used quinoa flour for extra protein. Lizzy spent a while slowly tasting and guessing and could not find any hint. So I will safely say that these pancakes are very much child- and adult-friendly, Yummy, too.
To make: combine 250g silken tofu + 1 cup of quinoa flour + 1 tsp baking powder + 1 tsp cinnamon grounds + 1/4-1/2 cup plant milk with an immersion blender. Cook as you would usually cook pancakes. This recipe will make around 10 pancakes.
