I didn’t need to make pancakes. I mean, it’s Saturday night. I should be out partying or at the very least socialising. But I’m not. I was recently diagnosed as having pre-menstrual dysphoric disorder, which seems to be PMS on drugs. It apparently affect 3-8% of women.
And so, I was trawling the internet, looking for a way to use the maca powder I recently purchased. It’s an ancient food that’s popular for it’s ability to balance mood, hormones and other women’s stresses and cramps. There’s more info available here.
But back to the pancakes. I found the recipe on naturallymeghan.com and I didn’t adapt anything because I haven’t used buckwheat before!
To make, mix the following:
- 1 TB chia seeds in 4 TB boiled water
- 1/2 cup buckwheat flour
- 1 tsp baking powder
- 1 TB cocao powder
- 1 tsp maca powder
- 1 ripe banana
- 1/2 cup nut mylk
