I buy frozen corn, and I am not ashamed! I like snap-frozen veg, particularly for non-home-grown peas and corn, because the starches start to break down so quickly after picking that they never taste good when found in the veg section of a supermarket. The issue with frozen things, however, is that I sometimes forget to return to the freezer and so the bag thaws. This is what happened yesterday.
I was therefore stuck with a bag of corn needing to be used within 24 hours.
Luckily I had been browsing some retro recipes and found an old corn fritter recipe. It was easy to veganise, and so I present you with a recipe for corn fritters, to serve one. Doubles easily.
½ cup polenta
½ cup self raising flour
½ – ¾ cup mylk
1 cup corn kernels, defrosted
1. Combine in a bowl, stirring until only just combined. Season well.
2. Spoon mixture on a lightly oiled frying pan, cooking for 3 minutes
before flipping and cooking for another three minutes.
This recipe makes about six fritters, and is best served with a yummy salsa.
