What do you do with a big pile of lemons? Well, a lot of things. But for one; I make lemon pancakes. There isn’t any reason beyond my love of pancakes in all forms (I don’t discriminate).
To make these:
1. Pour 1/2 cup of plant milk into a small bowl. Add in 1 heaped teaspoon of lemon zest, and 2 teaspoons of lemon juice. Allow to sit for a few minutes.
2. Add 1/2 cup wholemeal self raising flour to the milk and stir.
3. Cook as you would regular pancakes.
I served mine with a little whipped butter, lemon zest and lemon juice.
