I tried to make a “kvass” type drink, using wild yeasts (ie naturally occurring yeasts in the air) and sauerkraut starter, instead of bread yeast. Bread yeast reminded me of prison films, and I didn’t want the gunk floating around in my drink like a squishy mess of otherwise toastable food. Because toast is delicious.
I used the following method:
4-5 beetroots, chopped
1/4 cup starter (I used sauerkraut)
* do not grate the beets – it’s too watery
I placed them in a jar and waited.
