Another ugly shot. I think poorly lit photos are my superpower. The lighting and colour arrangements are all off, or perhaps I’m a perfectionist. I decided to post it anyway, because it’s yummy. And I want my blog to be about the taste and the looks coming second. There’s nothing worse than a beautiful looking meal that tastes like pencil shavings or shoe. This looks like a shoe or a road sign, but tastes good, so at least one part of it wins.
How to make a road sign:
Plain old Basmati Rice,
boiled and drained
1 onion, diced
2 garlic cloves, smashed
1 tsp ground cumin
1 tsp smoked paprika
1/4 tsp chilli powder
1/4 tsp smoke (optional)
1 can kidney beans (or black beans)
1 can diced tomatoes
2 TB tomato paste
1/3 cup veg stock
1. In a frying pan, add the onion and garlic. Stir until translucent.
2. Add in the spices. Once fragrant, add in the beans and stir to coat.
3. Add in your tomato, paste and stock, then allow to simmer for 10 minutes.
4. Once thickened, turn off the heat.
