Half of me didn’t want to post this bowl. It looks a little silly. But I couldn’t resist showing off my hydroponically grown baby kales, so here is it. I mean, how cute are those kale babies? I have black tuscan and the regular curly kind.
The curry uses Jackfruit. Jackfruit is a massive and spiky fruit from Asia, that we don’t really see much of. I’ve heard it tastes like a mix of banana and pineapple. However, when you get it while under-ripe, it has a very neutral flavour. And it’s firm while also being able to be ‘shredded’, and for this reason makes a great vegan ‘shredded pork’ substitute, that is surprisingly convincing. If you’re looking to purchase some, check out your local Asian grocery. There’s so much cool stuff in those places. It will be in the canned section. But please get green jackfruit and not ripe!
