Tonight’s dinner was yummy. And that’s the best outcome for everyone, because I usually make my meals enough for fourpeople, so that way lunch for the next day is already done. I think most bad food decisions are made when you’re hungry, so two meals prepared at one time is a good choice for us.
Anyway, on to the food. I haven’t had “Butter Chicken” for a long time – and not just because I don’t eat chicken! It’s just one of those meals that never screams to be eaten, in the way that something spicy like a Tikka Masala would. I might also make a korma soon…another ‘milder’ curry I haven’t had for a while! This Butter Lentils was very yummy, though. Because milder doesn’t have to mean boring-er. I was lazy and used canned beans – lazy and also because of time constraints after work! Using lentils meant they broke down slightly, which was of a similar texture to beef mince. It worked well.
Use a good butter substitute – I used Nuttelex, because YUM – and butter your naan bread, too!
4 TB butter
1 onion, diced finely
2 tomatoes, diced finely
2 garlic cloves, smashed
3-4 TB butter chicken curry paste
(or recipe below)
½ cup light coconut cream
1 bay leaf
1 can lentils, drained
1 can white beans, drained
1. In a frying pan, heat the butter. Once bubbly, add in the onions.
Cook for a few minutes, until translucent.
2. Add in the tomatoes and garlic, mixing among the onions.
3. Add in the curry paste, and let it sit until it begins to spit.
Stir to coat the onions, and then add the coconut milk to stop it burning.
4. Add in the bay leaf, the lentils/beans, and a little water to help them cook.
Simmer for about 10 minutes, until the sauce has reduced.
5. Serve warm, and stir through the fresh veg.
Remove the bay leaf before serving.

2cm piece of fresh gingerr
peeled and finely chopped
2 tsp garam masala
1 tsp chilli powder
1 tsp ground cumin
½ cup tomato puree
½ tsp cinnamon
¼ tsp cardamon
1. Blend everything in a mini blender,
and the use in place of the curry paste in the recipe above.
