If you’ve been following me on Instagram, it would not really shock you to hear that my favourite breakfast food is the wonderful pancake – wait; panCAKES, because who would ever just has one? My partner, on the other hand, does not like sweets for breakfast. He thinks that sweet food is horrible before lunch time. I have decided I won’t break up with him over this, because it means that I end up PRETENDING to offer him pancakes, so he can refuse, then I HAVE to eat two serves of pancakes. It’s a travesty but I deal with it as best as I can.
Your basic vegan pancakes are basic. As it should be. I don’t like getting up and searching out a myriad of ingredients that need to be stirred in at varying times. Gimme the basic batch every day. As a tip: these taste better when you make the batter the night before!
Ingredients (2 peeps)
1 cup self raising flour
1 cup mylk
1 TB apple cider vinegar
1 banana, mashed
Whip it all together and flip them out on a frying pan.
Looking to mix it up? Try adding berries
Or using a Chai tea mix instead of the mylk
Or add in ½ tsp ginger + 1 tsp cinnamon, and swap the banana for ¼ cup apple sauce
