Quick and Easy is the name of the day. It’s how all food should be. Who can be bothered with the difficult things, when life is hard enough as it is? That said, I don’t mind putting the effort into food, because it’s fundamental fuel, and gosh darn it tastes delicious. Gosh. Darn.
I have two similar options for you today, because they are perfect for any ‘mix and match’ option you may have in mind.
Saucy Mexi Tofu Salad
This works so well with the corn and it makes for a very refreshing Summer’s day dinner. The flavours are very basic, but they work really well together to make a sweet and savoury dish that was lovely and filling.
2 TB apple cider vinegar
2 TB tomato paste
1 tsp sugar
2 tsp cumin powder
1 tsp chilli powder
2 cloves of garlic
1 lime, juiced
250g firm tofu
1. Combine the ingredients for the sauce, and marinate the tofu for an hour,
tossing occasionally to make sure it’s all covered.
2. Fry up the tofu in a little water on a hot pan, flipping occasionally.
3. Brush any left-over marinade onto the freshly cooked tofu, and serve with a salad.
4. Salad options include: coriander + spring onion + tomatoes
+ capsicum + fresh corn + jalapenos
Mexi Chips & Salad
This was something I needed to throw together in a hurry because I was hungry and it was late. When I get hungry and there’s nothing about, I can get a bit crazy and there’s always a temptation to binge on unhealthy things. Which is a horrible habit of mine.
To whip this up, I used some greens, fresh corn and red onion. I squeezed on some lime juice, chucked in coriander and piled on some spicy bean salsa.
