My partner was very unwell today, and when sick I always think of chips as being the #1 food to eat. That and toast. But chips are delicious, so I like any excuse to eat them! I made both regular chips, as well as sweet potato ones, but the sweet ones were slightly overcooked and so were too mushy for my perfect chip pic haha. The pesto flavour is super mild, but super delicious. My partner doesn’t even like pesto, and he loved the pants off these chips. I served with a little vegan yoghurt, which has a spicy hot sauce stirred through it. Think chilli and cream wedges in one cute little bowl.
This is a super simple dish, so listen close or you’ll miss it.
- Slice up potato and sweet potato into sticks.
- Bring a pot of water to boil, and then add the potato. Boil for about 15 minutes, until the chips have softened a bit. Drain out the water.
- Return the chips to that pot. Add in 2 tablespoons of vegan pesto. It’s yummier if the pesto is a little oily! Give the chips a stir.
- Line a baking tray with paper, and then pour over the chips. Spread em out. Bake for 30-40 minutes, then serve.
