I know I should have added some colour to this dish, to break up the yellow, but I honestly didn’t have anything. Coriander would have been my preference, or fresh curry leaves, but beggars can’t be choosers! Today’s meal is a sweetly lemon and ginger infused rice, which is good if you have a flu-bug in the house. I don’t like to get sick, so I though this is a delicious and carby meal that will keep my partner away from me with his germs. It also tastes yummy.
1 onion, diced
4 cloves garlic, smashed
10cm ginger, grated (2-3 TB)
1 tsp ground turmeric
1 tsp nigella seed
½ tsp mustard seed
Handful of curry leaves
2 cups basmati rice, cooked and drained
½ head cauliflower, chopped
2 lemons, zest only
1. In a frying pan, heat the garlic and onion. Once sizzling, add in the four spices (which includes the ginger) and cook. When you hear some popping and it smells good, add about ½ cup of water and the cauliflower. Stir and cook 10 minutes.
2. Stir well, and add the curry leaves. Once the cauliflower is soft, you can add in the rice. Stir to make sure the rice soaks in all of that yellow goodness.
3. Remove from the heat, and then add the lemon zest. Stir it all really well, and then season and sir again. STIR I tell you!
4. Serve up your yellow goodness.
