The joy of these tarts is that they are simple and delicious. Simple, because all that fills them is coconut milk stored in the fridge. If you’ve never tried it; all that is required is to place a full tin of coconut milk in the fridge. The next day, carefully remove it and without turning it over etc remove the lid and scoop out the thick stuff on top. Once the clear liquid shows through, stop and you can use the remainder for something else.
To make two tarts, I used ½ cup instant oats + ½ cups pecans + ½ cup soft dates. Blend, and press into two small tart tins. Fill with thick coconut cream. Simple, and yet, oh so yummy! And so it’s perfect for breakfast time. I served mine with cherries and cacao nibs.
