Mushrooms are meaty creatures, and so they’re a handy meat substitute. In the case of shredded meat substitutes: King Oyster Mushrooms are the forest meat of choice. Buy fresh mushrooms, and use two forks you are able to shred the mushrooms as you would slow-cooked chicken or pork. The spongy texture is very similar to meat, save that it takes no time to make the texture of meat that takes several hours to get so soft.
When you first get the mushies, remove the bumpy brown bottoms, which have a texture similar to bark. I also chop up and add the mushroom caps. Cook the mushrooms just enough to warm them, and you’re done. In the picture up top, I’ve used Oyster Mushies in a simple dish – I just soaked the shredded mushrooms in soy sauce, garlic and chilli. I then cooked them in a frying pan for a few minutes, and then added veggies. Serve with rice. Super simple.
