To make, fry up the garlic and onion until soft and caramelised. This will take about 10 minutes or so. I like to leave mine sitting for a bit without stirring. Add in the paprika, mustard and chilli to cook for a minute or two, before adding the remaining ingredients. Make sure it’s all mixed well together. Add in the mushrooms, and cook out the liquid – this should take another 10 minutes. Stir through the peas and corn if using. Serve with couscous.
