After this we had the absolute worst garlic breath, but that was because I had mixed raw garlic through the potato. Deliciously garlicky. This dish was simple and delicious, and reminded me how scrumptious a baked sweet potato is. The sweetness and earthiness is so amazing, I think that I could eat them very night of the week! This recipe is from the minimalistbaker and I just reduced a few of the ingredients for the sake of simplicity.
4 medium sweet potatoes
1 can chickpeas, drained
½ tsp cumin + coriander grounds + cinnamon + paprika
1 tub of hummus
2 TB garlic paste
- Preheat the oven to 200°C and line a baking tray. Slice the sweet potatoes in half, along the longer side. Smear the garlic along the cut-side of the potato. Place cut-side down on the baking tray.
- In a small bowl, toss the chickpeas in the mixed spices. Pour over the top of the sweet potatoes, and then bake for 40 minutes.
- When the potatoes have cooked, remove from the oven. Scoop out some of the potato flesh and stir the garlic through the mash. Season well. Jumble the cooked chickpeas over the mash, and dollop with hummus.
