The day before month two of Autumn, and the weather is overcast. It’s still warm outside, but there’s promise of the soon-approaching Winter season, and I’m preparing to add another blanket to my bed. This evening I felt like the comfort pies that I love.
The filling really is just whatever is on hand. I used 2 onions + 2 carrots + 1 leek + 1 cup peas/corn. Add in a little stock with the veggies while you cook over medium heat on the stove. Once the water’s mostly gone, add in 1 TB curry powder and 1 TB corn-starch to thicken. Pour into 4 small ramekins and cover with puff pastry. Pretty simple! Poke a hole in the lid.
For the chips, I mixed it up (I don’t recall where I saw this recipe so please let me know if it’s yours so I can change it!) I used a pack of plain potato chips (100% potato). I coated in 1 TB soy sauce + 2 TB oil then tossed with 5 TB flour + ½ tsp garlic granules + 1 tsp sumac + salt + pepper. I baked the chips and pies at the same time, for 25 minutes at 180°C, until the fries are crunchy and cooked through.
