This was a quick something I threw together for my partner, and he ended up eating about 3 serves of it.
1. In a bowl, combine 1 cup dry TVP + 3/4 cup boiled stock + 1 tsp cumin + 1 tsp coriander powder. Allow to soak, stir occasionally.
2. In a fry pan, heat onion and garlic. Pour in the TVP and stir to make sure it doesn’t stick. Add 1/4 cup mushroom soy sauce.
3. Add in chopped veggies, such as capsicum, as well as a tin of water chestnuts.
4. Serve in lettuce or cabbage leaves, along with fresh coriander and fried noodles.
