It’s the first time in a long time that I’ve gone for a run without overheating like crazy. Autumn is fully upon us, and the weather is finally starting to become habitable. Which means that I felt like muffins! These are super healthy, and delicious. The recipe is for 6 medium muffins, or 4 large.
– ½ cup wholemeal self-raising flour
– ½ cup instant oats – ground to flour
– 10 dry dates, chopped
– 1 TB flaxmeal
– ¼ cup applesauce
– 2 TB coconut oil
– ¼ cup strong espresso
– ½ tsp apple cider vinegar
– ½ tsp bicarbonate soda
– ½ tsp ground cinnamon
– 1 apple – half grated, half chopped
To make, soak together the vinegar, bicarb, coffee, flax and dates for 10 minutes. The dates should become mushy. Add in the oil, applesauce and cinnamon, then stir well. Pour in the flours, stirring just enough, before folding through the apple.
Bake for 30 minutes (approx.) at 170*C. Enjoy while still warm, with a slather of butter!
