Did you know that if you mix mashed banana and instant oats in equal quantities, you can make biscuits?
That means that if you weigh out 500g banana, then you will need 500g instant oats, and so on. Add in some flavour, such as cinnamon, and then add in a few handfuls of something sweet, such as coconut flakes or sultanas. It’s that simple. Scoop into tablespoon sized blobs and plop on a tray.
Bake for 20-30 minutes at 200°C until cooked, and then allow to cool on a wire rack. Super simple, right? My partner and I actually used 3 bananas and then ate all of our biscuits. All of them in one go, with a strong coffee, and that was breakfast.
