This recipe is for ONE serve, although the serving size in the picture is not for one. My serve is at the front, and the boy’s is at the back (haha, not really). I wanted it in one giant pile of wonder, but it turns out that gravity won’t always approve of giant pancake stacks to the sky. But it still reached heaven – ambrosia heaven.
To make these babies for ONE – leave ½ cup mylk to sit with 1 tsp vinegar. When curdled, combine with ½ cup self-raising flour, ½ tsp each of cinnamon and ginger, 1 tsp maca, as well as ¼ tsp cloves and allspice. Mix it all together. Cook as you usually would. I also added in a few frozen berries.
To make the silly syrup: bring to a simmer and remove from heat 1 TB brown or coconut sugar, ¼ cup chai tea.
