Did I eat this cake for breakfast? You will never know. Mostly, because I’m telling you right now.
I’m sitting in my new home office and calculating how little money I have. There’s coffee and delicious cake, and I can handle anything.
This cake can be halved if you only want one layer, but who only wants one layer of cake when you can have two?
To make this baby, you’ll need the following ingredients:
- 3 cups of roast pumpkin
- ½ cup applesauce
- 2 TB coconut oil, melted
- ½ cup granulated sugar
- 2/3 cup diet ginger ale
- Pinch salt
- 2 cups wholemeal self-raising flour
In a food processor, blend together the pumpkin, applesauce and ¼ cup water. Once blended, pour into a large bowl. Stir through the remaining ingredients, adding the ale at the end. Pour into TWO 20cm cake tins and then bake for 35-40 minutes. When the centre springs back to the touch, remove from the oven and allow to cool.
To make chocolate icing, whip together coconut cream, cocoaand icing sugar. It will taste delicious, and you can slap it between the two cakes and over the top.
