I wanted to make this cake, having seen it somewhere on facebook.com
It’s a three ingredient cake, and that’s hardly any effort at all. Plus, it’s vegan and you can adapt it rather easily. I have reduced the portions to make into two ramekins, so that it isn’t a massive cake. To make these two cuties:
1. Leave a cup of freshly brewed coffee (about 300mL) and 300g sultanas to soak for 30m.
2. When plump, stir through 3/4 cup of buckwheat or any other flour.
3. Pour into 2 ramekins, and bake until the top springs back – about 20 minutes.
